Sedani with Sausage, Peppers & Onions

About the Recipe

Ingredients

  • Extra virgin olive oil

  • 1 jar roasted peppers, drained cut into strips

  • 1 jar roasted onions, drained and sliced 

  • 14oz Bianco di Napoli whole peeled tomatoes, lightly crushed by hand

  • 4 links Italian Fennel Sausage, grilled and sliced 

  • 1lb Dried Etto Sedani

  • finely grated pecorino romano, plus more for serving

  • Italian parsley, chopped, for serving

Preparation

STEP 1

Cook sausage either on the grill or on a skillet and set aside.

STEP 2

Meanwhile, heat olive oil over medium heat in a large skillet or wok. Add peppers and onions and saute until just beginning to brown. 

STEP 3

Add the tomatoes and bring to a simmer. Cook for about 2-3 minutes until sauce just begins to thicken. 

STEP 4

Meanwhile, In a large pot, bring 4qt of water with 1-2tbl salt to a boil and cook pasta according to package instructions until al dente. Reserve a cup of pasta water before draining.

STEP 5

Drain pasta and add to the pan with the sauce. Toss pasta with sauce, adding pasta water if needed to loosen the sauce and create a cohesive consistency. Divide into bowls and top with cheese and parsley.
