We love the simplicity of pasta and this is the perfect recipe to showcase how easy a delicious meal can be to make.
1 lb dried Etto Radiatori Pasta
2 tbl good quality olive oil
1-2 pints sungold tomatoes
3 large garlic cloves, minced
Fresh basil leaves
Bring 4 quarts of water with 1 tbl kosher salt to a boil. Cook radiatori pasta according to directions on box until al dente
Meanwhile, heat olive oil in a large skillet or wok over high heat. Add tomatoes and cook, stirring occasionally until they burst. Add garlic and cook until a sauce begins to form.
Drain pasta, reserving 1-2 cups of cooking water. Add pasta to the skillet. Stir to combine pasta with sauce, adding just enough cooking water to form a creamy sauce.
Divide into bowls, top with half a burrata, torn basil leaves, parmesan, and a drizzle of good olive oil.
